Since Rune Sonnichsen started as Head of Food & Beverage in 2024, a lot has happened at Willys Bistro.
As a former chef, waiter and award-winning sommelier, Rune has taken Willys to new heights. The menu offers flavorful bistro classics inspired by French country cuisine - and a wine cellar to complete the experience.
Willys Bistro today offers everything from Private Dining to Dinner & Jazz and parties up to 400 people - and always with a love for a good meal.

Willys is the restaurant in the Classic Car House in Lyngby and a natural gathering point for all visitors. But when the lights go out in the museum and car hotel, we are still open. You don't need to buy an entrance ticket to Classic Car House to eat with us.

Willys Bistro is at the heart of it all —and we are now looking for a Floor Manager to keep things running smoothly.
We’re looking for someone who thrives in a central role, managing busy evenings, engaging with guests, and possessing a natural ability to foster a calm atmosphere and strong teamwork. You’ll serve as a close partner to our Restaurant Manager and help ensure that operations run smoothly—day after day.
Responsibilities:
Ensure a high-quality and consistent guest experience—from the first smile to the final goodbye
Be present on the shop floor and work closely with the team to manage operations
Take full charge in the Restaurant Manager's absence
Train, motivate, and develop employees so they can perform at their best
Ensure structure, orderliness, and compliance with procedures and standards
Handle guest inquiries professionally and with empathy
Assist with shift scheduling and ensure proper staffing
Who we're looking for:
You don’t have to have tried everything—but we’re looking for someone who knows the restaurant industry
from the inside and has experienced what it’s like to be in charge of an entire evening.
Extensive experience in the restaurant industry, preferably with operational and managerial responsibilities
Strong in hospitality and communication—both in Danish and English
Ability to create calm, provide direction, and maintain a clear overview—even in the midst of rush hour
A natural people person with a keen eye for detail
A role model for the team; you lead by example and inspire others with your presence
A solid understanding of food safety and hygiene standards

Julie Brink Færch is the director and co-owner of Dansk Sommelier Uddannelse—one of Scandinavia’s leading sommelier training programs for the past 10 years.
With more than 20 years of experience in the restaurant industry, formal training as a server, and several sommelier and wine courses under her belt, she has built up a strong professional knowledge and a deep understanding of wine—both in theory and in practice.
She is passionate about making wine accessible, relatable, and exciting.
For Julie, wine isn’t about knowing the “right” words, but about understanding what’s in the glass and why you like it. She’s known for her ability to explain wine in simple terms, so everyone can join in—no matter their level of knowledge.
Her focus is always on ensuring that participants leave with practical knowledge, tools they can actually use—and a desire to learn even more.
Julie's wine evenings are informal, educational, and cozy. There's room for questions, laughter, and curiosity, and she goes out of her way to make sure everyone feels comfortable.
In short: You don’t need any special knowledge of wine to join in—you just need to be interested in tasting and learning a little more.
