At the heart of the bakery you will find Herman – our trusty house sourdough. Together with carefully selected organic ingredients and techniques such as high hydration, he creates the characteristic moistness, crispy crust and deep, complex flavor that characterizes all our bread.
Two decades at the oven have refined every single detail. From the 27 crispy, butter-baked layers in our cinnamon rolls to the perfectly balanced acidity in our rye bread. Nothing is left to chance.

When organic Öland wheat meets Italian wheat – and Herman does the rest.
We have combined the best of two flour worlds: carefully selected organic Öland wheat and distinctive Italian wheat. The rest is left to Herman, our living house sourdough.
With a hydration level of 85%, we create bread that is exceptionally moist, light, and aromatic. The high water content results in an open, silky-soft crumb and a crispy crust—along with impressive shelf life.

A hearty and moist rye bread, baked with time, love, and deep respect for tradition.
We roast pumpkin, sunflower, and flax seeds to bring out their nutty aroma and give them maximum flavor. Dark malt adds body and a slightly caramelized sweetness, while Herman sourdough creates the perfect balance between acidity and depth.
